Shredded Brussel Sprouts with Lemon Vinaigrette

Shredded Brussel Sprouts Salad With Lemon Vinaigrette is an Amazingly Simple Festive Salad that can be tossed in less than 30 Minutes.

Last couple of weeks have beeen full of indulgence, having elaborate meals on numerous occasions. Much more than the regular light meals ! When you are cooking for guests, it’s got to be elaborate , its got to be special !!

Amidst all this, we have totally taken a back seat with  Salads and Low carb meals, and it’s high time I say ” I need Greens !! I need Salads”. Something really light, something festive and something in a jiffy.  With the festive season is high spirits and a pack of Brussel sprouts stacked away in my American Fridge , I knew exactly what to make.

Shredded Brussel Sprouts with Lemon Vinaigrette
Brussel Sprouts – Yay or Nay ?? Raw or Cooked ?? Making Stir Fry or Oven Roasted Brussel Sprouts is the regular thing.Well Its actually nice to try Raw Brussel SProuts super thinnly shredded in combination with the rest of the “Healthy” Ingredients. Toss them with Pomegrantes, RedOnions, Nuts, Shaved Cheddar Cheese and an Amazing Viniagerate to give the Salad some body.

With Christmas just a few days away, this salad finds its place in a Christmas Meal Setting.  Super Simple to put together and awesome lots of heathiness.

 

Shredded-Brussel-Sprouts-With-Lemon-Vinaigrette

Using my Brand New OXO Mini Vegetable SLicer, I shredded the brussel sprouts really thin. Its really amazing how quickly and finely can one slice them. Simply place the sprouts in the chamber and slide the holder back and forth. The angled blade creates even slices in seconds, and the textured ramp prevents the food from sticking. But Ouch!!Ouch!! it hurts let me tell you. The blades are super sharp, so dont take it lightly by shredding without the holder.

You could slice them thin with your regular sharp knife too if you don’t have a slicer. But I will highly recommend you to pick one for yourself – Either the  Handheld Vegetable Slicer ,Mini or the Maxi Mandoline Slicer  to make your life a 50% easier whilst making salads or stir fry’s. Heyy !! BTW.. I thought its not too fair to brag so much about my brand new gadget and not share it with my readers.Yes !! Yes .. Shredded Brussel Sprouts with Lemon Vinaigrette

SHREDDED BRUSSEL SPROUTS SALAD

Time Taken 25 Min | Serves 6 -8

Shredded Brussel Sprouts with Lemon Vinaigrette

Ingredients
500g of Brussel Sprouts Shredded
4- 5 Tblspn Pomegranate Kernels
1 Small Red Onion, thinly sliced
Handful of Pecans roughly chopped or whole ( as you like)
Salt & Pepper to taste
Shaved Cheddar Cheese for garnish

Lemon Vinaigrette
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon finely grated lemon zest
11/2 tsp Maple Syrup
1 tsp Dijon mustard
About 3 Tsp of Extra Virgin Olive Oil
1 Tsp of Apple Cider Vinegar
A Pinch of Sea Salt
Freshly black pepper to taste

Directions
Wash and pat dry the Brussel Sprouts. Thinly Shred the Brussel Sprouts using a vegetable slicer. Alternatively slice them thin with your knife. Using the fingers, gently mix them to separate the shreds from the greens nicely.
Place them in a Large Bowl, add Sliced Onions and toss.
In a small bowl, whisk together lemon juice, lemon zest, dijon mustard, maple syrup, oil, vinegar and salt. Taste and adjust the consistency of the Vinaigrette to suit your palatte.
Pour the Dressing over the Brussel Sprouts Salad and toss until well coated.
Add Pomegranate Seeds, Pecan Nuts, Shaved Cheddar Cheese to the salad.
Taste and adjust the seasoning with needed salt and pepper. Toss to combine.

  • I think it would be an invented favourite of mine – a red onion coleslaw with no mayo but a red wine vinegar dressing spiced up with a little chilli, garam masala and fresh herbs. Sounds a mess but tastes great!
