Instant Pot Beets is one of my favorite most ways to cook Beetroot! Above and over, it is easy, fuss-free, and foolproof!
Whether you are cooking beet for a salad, or as a healthy snack, pressure cooking beet is completely handsfree. Naturally dairy, gluten and nut-free and totally delicious.
WHAT ARE BEETS?
Beetroot, commonly known as beets are bright red root vegetable, enjoyed in many cuisines all over the world. They can be enjoyed as whole, powder, juice – whichever you fancy. Beets are loaded with essential nutrients like vitamins, minerals, potassium, manganese and folate. Rich in fiber, they are absolutely delicious and easy to add to your diet.
We love include Beets right from snack to dessert in our diet – Beetroot Chips, Red Velvet Pancakes, Beetroot Hummus, Beetroot Thoran , Spiralised Beet Salad and Beetroot Flatbreads. I make Beet flatbreads so often, but they haven’t made it to the blog yet. Stay tuned as I am hoping to make them soon.
HOW TO SERVE COOKED BEETROOT?
Once the beet is pressure-cooked, we like to enjoy them like a side dish – Beet Thoran. For this Healthy curry, I like to temper the cooked beetroot with seasoning and garnish with grated coconut. Here’s my detailed recipe for Beetroot Thoran also known as SouthIndian Beetroot poriyal.
My mum still prefers to cut the beet to precision and then pressure cook. But I like to pressure cook in Instant Pot first and then cut them. With this, beet is easy to handle and quicker to cut.
We also like to make Instant Pot Beet Salad. These are also super simple and delicious. Once the beet is cooked, slice them or dice them to your liking.
Toss them in a dressing made with olive oil, lemon juice, salt, pepper. Finally garnish Beet Salad with dill leaves or spring onions.
INGREDIENTS TO MAKE INSTANT POT BEETROOT
All you need is Beetroot and Water! Don’t be surprised as I don’t have an extensive list of ingredients of list of cooking pots to use to cook beet.
You will also need Instant Pot Pressure Cooker!
HOW TO COOK BEETS IN THE INSTANT POT?
There are many ways to cook beet – on the stove top, in the oven, microwave and even pressure cookers.
My favourite way to cooking beet is in the Instant Pot – that you will never ever way to make them in any other way – Its totally hands free.
Step 1. Prep the beet – Scrub & Wash. Measure the circumference of the beet to give you a rough idea on the cook time.
Step 2. Pour a cup of water into the inner pot of your Instant Pot. Place the stainless steel trivet that came along with your instant pot. Place the Beet inside the basket and then on the trivet. Secure the lid and turn the vent to sealing.
Step 3. Select Pressure Cook HIGH for 12 – 35 minutes depending upon the size of the beetroot. Natural Pressure Release. For a 7 inch medium sized beets, cook time is approximately 20 minutes.
Step 4. Remove the beet from the Instant Pot and allow them to cool. Once the beets is cool to touch, carefully peel/ rub off the skin with ease or leave the skin on ( choice is yours ). Serve it to your liking in a salad, curry or whatever is your favourite.

TIPS FOR PRESSURE COOKER BEETS
Roughly Measure the beet to decide on the cooking time. Smaller the beet, cooking time will be lesser.
Cooking time for Beets – Depending upon the size of the Beets, your cooking time will vary. For a 5 inch Beet, cooking time will be 12 -15 minutes, 9 inch Beet, cooking time will be 28 – 32 minutes, 12 inch Beet, cooking time will be 40-45 minutes
How to Remove Beets Stains?
Beet Juice can easily stain! Using Disposable Gloves is great for handling beet. However if you are not too keen with gloves like me, simply handle the beet as normal.
Wash your hands off immediately after handling beets. The color will wash off easily. If you let it sit too long, beet can leave blood red stains on your fingers. Lemon Juice or Baking Soda has the magic trick to remove beet juice stains too!

- 2 Beets 12 inches circumference
- 1 Cup Water

- Scrub the beets well and wash them until clean.

Absolutely you can just use Trivet in the Inner Pot and add 1 cup of water. I use the basket as it’s easy with the handle with warm beets.
