As we slip into November every year, we literally want to reach out for something comforting, something really easy! And why not? Temperatures are cold, the leaves have nearly fallen and I need just a cozy blanket & a couch.

What is minestrone soup made of?
Minestrone Soup is a thick vegetable soup made up Vegetables, Beans and Grains.
Vegetables – Use seasonal vegetables or left over vegetables from Thanksgiving – Carrots, Potato, Zucchini, Butternut squash, cabbage, asparagus, mushrooms, turnips. This list is extensive and the combination of vegetables will alter the taste of minestrone soup every time.
Bean – cannellini beans, Kidney beans, mix of 5 grain beans, northern beans
Grains – Pasta, Noodles, Bulgar, Rice
Greens – Kale, Spinach
This method of making minestrone is not going to disappoint you as its really quick cooking and no baby sitting needed.

INSTANTPOT MINESTRONE SOUP INGREDIENTS
Okies, we have an elaborate list of ingredients to make this delicious soupy meal. Let me tell you, together they make a hearty and exciting dish at meal times.
Garlic elevates the flavor and they are an absolute must in the recipe.
Onions lends the perfect balance in flavors. I prefer to use white onions or shallots but you can also use red onions.
Celery adds flavour to this dish. I would not recommend skipping this ingredient if possible.
Vegetables – Go on and add whatever vegetables you enjoy. I have added zucchini, carrots and spinach
Cannellini beans– Remember to drain and rinse the canned beans before adding to the soup.
Canned Tomatoes in Juice – Add them all together. Tomatoes add great body to this soup. It’s too good to be missed. You always swap it with Marinara Sauce or Pomodora Sauce too.
Pasta – I loved adding conchiglie rigate ( also known as shells ), which adds great texture to the soup. You can also use elbow macaroni or any other miniature paste.
Vegetable broth
Baby spinach can be added before cooking just like how I have done. You can also add spinach after opening the IP and just allowing it to wilt.
Seasoning – A good tablespoon of Italian seasoning does all the magic along with salt & pepper.
HOW TO MAKE MINESTRONE SOUP IN THE INSTANT POT step by step?
No time for low & slow? Make Minestrone soup in the Instant Pot and you will be pleasantly surprised how mouth watering they turn out.
It’s all about adding the ingredients and pressure cooking for a short time. The key is also to Quick Pressure Release and not Natural Pressure Release because we do not want overcooked pasta and mushy vegetables.
To prepare Instant Pot Vegetable Minestrone Soup, press Sauté on your Instant Pot. When they are hot, add oil, garlic, onions and saute until a bit of raw smell is eliminated. This step is completely optional.
In other words to prepare a DUMP & START MINESTRONE SOUP, simply add all the ingredients into the inner pot of IP.
Add celery, zucchini and carrots.
Add cannellini beans, pasta and canned tomatoes.
Now add the vegetable broth and spinach. Season well with Italian seasoning, salt & pepper.
Add the bayleaf.
Secure the lid, seal the valve and pressure cook HIGH for 5 minutes. Quick Pressure release the steam. If you like it aldente, pressure cook for just 4 minutes.
Open the lid after the valve drops and stir the soup. There is a high possibility, the soup could be thin – well that is how we like. If you would like a thicker consistency soup, simply allow the soup to boil in Saute mode for another couple of minutes until you achieve the right consistency of your choice.
Ladle the soup out in bowls and serve with bread!

Equipment
- Instant Pot 6 Qt
Ingredients
- 2 Tbsp Olive Oil
- 3 Cloves garlic finely chopped
- 1 medium white onion finely diced
- 1 cup zucchini diced
- 1 cup carrot diced
- 1 cup cannellini beans cooked
- 400 g Tomatoes with tomato juice
- ½ cup pasta
- 3 ½ cup vegetable broth
- 2 cups baby spinach
- 3 bayleaf
- 1 tbsp Italian seasoning
- salt to taste
- ½ tsp pepper
Instructions
- Press Sauté on your Instant Pot. Once it displays HOT, add oil, garlic and onions. Sauté for 1 minute.
- PRESS CANCEL.
- Add the zucchini, carrots, cannellini beans, canned tomatoes, pasta and vegetable broth to the pot.
- Now add spinach and stir to give all the ingredients a good mix.
- Season with Italian seasoning, black pepper and salt.
- Add the bayleaf.
- Secure the lid, seal the valve and pressure cook HIGH for 5 minutes. Quick Pressure release the steam.
- Open the lid after the valve drops and carefully stir the soup.
- If you feel the soup is watery, just press Sauté and allow the soup to boil for a couple of minutes.
- Ladle out the soup into bowls and serve with rusty bread.
