Easy Air fryer Vegetables medley recipe
Roasting vegetables in the air fryer is quicker and easier than you think. Toss the cut vegetables with your favorite spice blend and air fry to perfection. Isn’t it simple and a straightforward? Although they don’t look glamorous, they still make a tasty side dish on the plate.
I have chosen a blend of spring vegetables – zucchini ( courgette ), carrots, onion, cauliflower and mushrooms to air fry in my Instant Pot Vortex 6 in 1 air fryer.
They are perfect to serve on busy weeknights to accompany Creamy sun dried tomato pasta or even Garlic noodles. Just my kind of vegan family dinner recipe.

Ingredients
Choice of Vegetables – Use any of the vegetables that you have at hand. I have used Courgette, Carrots, Red Onion, Cauliflower and Mushrooms. You can also use Broccoli, Potatoes or Peppers. Avoid soft mushy veggies like tomatoes.
Seasoning blend – My go-to seasoning has olive oil, salt & pepper, garlic, Italian herbs seasoning or Herb de Provence and lemon juice.
How to Air fry Vegetables with step by step instructions?
Prep the marinade – Combine the seasoning ingredients together. This can be done ahead of time. When I am in a rush, I like to add the ingredients in a small mason jar and shake to combine.
Prep the vegetables – Slice the vegetables to similar sizes. This can be done ahead of time.
Pour the marinade and toss – Drizzle the marinade all over the vegetables and toss together, until well coated.
Air fry– Transfer the seasoned vegetables to the air fryer basket and cook for 10-12 minutes until tender, and roasted.
Serving Suggestions
These Air fryer Veggies are a perfect side dish for busy weeknight dinner as well as for festive occasions like Christmas, Thanksgiving and Easter.
Serve the perfectly roasted vegetable medley along with creamy tomato pasta, garlic noodles or cauliflower fried rice. They are also perfect to be served inside a fajita wrap.
Storage
Fridge – Store these roasted air fryer vegetables medley in air tight container, in the fridge for up to 5 days.
Reheat – Place the bowl with vegetables in microwave and heat thoroughly. Alternatively transfer to air fryer and air fry at 180C for 3-4 minutes.
Freezer – I would not recommend freezing the cooked marinated vegetables. They tend to get too mushy and soft after reheating, loosing it texture and optimum flavors.

How to make Air fryer Christmas Vegetables?
Christmas dinner can be extremely stressful and this easy side dish can come to your rescue. To make air fryer Christmas vegetables, use winter root vegetables like parsnips or turnips, carrots, potatoes, brussel sprouts and onion.Toss them in seasoning mentioned below and air fry at 200C for 15-18 minutes. Stir every 5 minutes and cook until they are tender.

Can you air fry frozen vegetables?
Yes, you can roast frozen vegetables in the air fryer. However, they will have too much water content and may not have the same texture and taste as the fresh ones.
What other vegetables can you use for air frying?
Use any vegetables you have in your kitchen for air frying. The cooking time can slightly vary depending upon the type of the veggie you are using. Apart from courgette, cauliflower, onion, carrots and mushrooms, you can also use red bell pepper, broccoli, sweet potatoes or potatoes. Do not use Tomatoes as they can get too mushy.
You can also use root vegetables for air frying.
Can I marinade the vegetables before air frying?
Yes, You can marinade the veggies for air frying for up to 30 minutes. Leaving them longer can leave the vegetables a bit mushy as they absorb the moisture.
Can I prep the vegetables ahead of time?
It is a good idea to prep the vegetables ahead of time. Slice the vegetables to similar sizes and store them in the refrigerator until you are ready to use.

How to make an Air fryer Vegetables Medley?

- 1 small head Cauliflower cut into small florets
- 1 Carrot sliced
- 15 Mushroom halved
- 1 Courgette Zucchini , sliced
- 1 medium red Onion cut into wedges
- 2 Tbsp Olive Oil
- 1 Tsp Lemon Juice
- 1 Tsp Italian seasoning or Herb de Provence
- 3 cloves Garlic minced
- Salt to taste
- 1/2 tsp Fresh crackled pepper
Instructions
- Preheat the air fryer to 180 C/ 350 F for 3 minutes.
- In the meanwhile combine olive oil, lemon juice, garlic, Italian seasoning, salt and pepper to a bowl.
- Pour the marinade over the vegetables and toss to combine. Leave it to marinate for 15- 30 minutes( optional step)
- Transfer the seasoned vegetables to the air fryer basket , shake to spread them out in a single layer. Cook for 10 – 12 minutes, stirring every 5 minutes until tender, crunchy and perfectly roasted.
