Baba ghanoush is a fantastic recipe to use up any extra aubergines(eggplants) you have at home. Plus it is easy to make, versatile to enjoy and suitable for Vegans. Enjoy it as a side for flatbreads or dips for snacking – totally irresistible and healthy too.
To make baba ganouj, roasting aubergines is key. I prefer using the air fryer over the oven for a quick, hands-free method.
What makes my roasted aubergine dip extra delicious is that, I enhance the flavour by stuffing garlic into the aubergine before roasting. This technique adds a unique depth that surpasses simply adding raw garlic during processing. I use the same trick for making Baingan Bharta, an Indian roasted aubergine mash. Give it a try!
What is Baba Ganoush?
Baba Ghanosh is a smoky aubergine dip originating from Lebanon or Middle eastern cusine. Locally known as baba ganoush, mutabbal, mutabal, melitzanosalata, or blagadoush, this flavourful dish involves roasting aubergine (eggplant) in the air fryer or oven.
After peeling, it’s blended with lemon juice, tahini, and spices for a delicious aubergine dip.
Ingredients for air fryer baba ghanoush
Aubergine (Eggplant or Brinjal) – Adds a smoky flavour and creamy texture when roasted.
Garlic – Enhances the overall savoury profile and complements the roasted aubergine.
Tahini – Is one of the key ingredient. It provides a rich, nutty undertone and smooth consistency to the dip.
Olive oil – Always use good quality extra virgin oil for a wholesome taste and a velvety finish.
Spices – I personally prefer a blend of Cumin and Smoked Paprika to infuse a warm, earthy aroma and a subtle smokiness, elevating the overall flavour.
Garnishes – I like to choose from options like fresh parsley, drizzles of olive oil, and/ or a sprinkle of smoked paprika to enhance both visual appeal and taste.
How to make Baba Ganoush in Air fryer?
Start by cooking the aubergines / eggplants. While you can roast the whole eggplant in the air fryer, I prefer slicing for a quicker process. Halve the aubergines, prick them to release steam, and stuff garlic cloves into them. Brush with olive oil.
Air fry the eggplants for about 18-20 minutes or bake in the oven for 45-50 minutes. Using tongs, carefully place the aubergine on a plate. Let it cool, then scoop the flesh into a food processor.
Add the remaining ingredients – oil, tahini, lemon juice, ground cumin, paprika, and salt. Process to a semi-smooth consistency.
Transfer to a bowl, garnish, and serve.
What pairs well with Baba Ghanoush?
Baba ghanoush is commonly enjoyed with toasted pita bread or warm flatbread. I love to enjoy this aubergine dip alongside additional dips like yogurt garlic sauce, carrot hummus, turmeric hummus, and green chutney, accompanied by fresh salad veggies. It also makes a delightful addition to a mezze board on occasions.
Also, I enjoy in using this roasted air fryer aubergine dip as a flavourful spread for sandwiches or wraps.
Storing Baba Ganoush
Prepare this air fryer eggplant dip in advance and store it in an airtight container in the refrigerator for up to 3 days. While you can freeze leftover baba ghanoush, note that the texture may differ slightly from its freshly made state.
Vary the Baba Ghanoush recipe
Adapting the baba ganoush dip is a breeze. Keep it simple by skipping the addition of spices while processing the aubergine.
Not a tahini fan? No problem. Make baba ganoush without tahini by leaving it out.
Craving an extra tang? Increase the amount of lemon juice and add lemon zest to suit your taste.
If you love a spicy kick, try topping the baba ganoush with chili oil or chili flakes.
Experiment with different toppings such as roasted chickpeas or pomegranate seeds to easily customize your dish.

Oven roasted aubergine with tahini
Baba Ganoush in Air fryer and Oven recipe below
Ingredients
- 2 medium aubergine eggplant or brinjal
- 4 clove garlic
- ¼ cup olive oil
- 3 tbsp tahini
- 2 tbsp lemon juice
- ½ tsp ground cumin
- ½ tsp smoked paprika
- Salt to taste
Garnish
- 1 tbsp olive oil
- 1 tbsp fresh parsley
- ¼ tsp paprika
- Salt & pepper to taste
Instructions
- Slice the Aubergine into 1/2. Prick it several times to allow the steam to escape. Stuff Garlic cloves into the aubergine. Brush with Olive Oil.
- Air fryer Instructions: Preheat the air fryer to 205°C. Place the cut side Aubergine facing down and air fry for 15 – 20 minutes until roasted.
- Oven instructions: Preheat the oven to 200C. Arrange the aubergine on the baking sheet and air fry for 45-50 minutes.
- Carefully pick the aubergine with tongs and place on a plate. Allow to cool down.
- Scoop out the grilled aubergine flesh and add it to the food processor. Add oil, tahini, lemon juice, ground cumin, paprika and salt and process to a semi smooth consistency.
- Transfer to a serving bowl. Drizzle a little more olive oil, paprika, parsley, salt & pepper. Serve with Fresh bell peppers, cucumber, and flatbread.
