Light and Easy Vegetable Clear soup is simply delicious and nutritious! It’s a mildly spiced soup that makes up for light lunch on its own, or make it a meal with crusty bread.

It is one of the most popular restaurant style clear soup recipe with vegetables that can be made at home and one of our favourites too!

ABOUT CLEAR VEGETABLE SOUP

Call it Clear Veg Soup, Veg Clear Soup, Vegetable Clear Soup – this Soup is one of my childhood favourites. Many a times, when we visit the restaurant, we would either have a Tomato Soup topped with Croutons or this Vegetable Clear Soup or Sweet Corn Soup as the first course of the meal.

This is a light and delicious soup that actually builds up the appetite for a sumptuous large meals. If you are ordering this soup in an Indian restaurant, do request them to halve the soup and bring it to the table – as the portion sizes are quite large. The restaurants also serves soy sauce, vinegar spiced with chili and sweet chilli sauce in small containers when they bring the soup. This gives you the option to flavor to mixed vegetable clear soup to your liking.

Did you know that this clear soup is quite a popular soup in India and in the Indo Chinese Cuisine too. Mostly this soup consists of cabbage, pepper, carrots, beans and sweet corn. However you can use choice of your favourite vegetables or even the vegetables that require clear out from the fridge.

To jazz it up, it is mildly flavored with soy sauce and vinegar. But you can also add sweet chilli sauce or green chili sauce too.

INGREDIENTS FOR MIXED VEGETABLE CLEAR SOUP

You will need the following to make this easy peasy clear veg soup.

Vegetables – Go easy on the choice of vegetables to make this soup. I typically love to use cabbage, carrots, onions, sweet corn and beans. Depending upon whats available in refrigerator to clear out, I do like add Leeks, Mushrooms, Broccoli or even Cauliflower accordingly.

Oil – Olive Oil or Sesame Oil works best in this soup

Onions – You can use white or red onions – depending upon what you use, the color of the soup will vary.

Ginger Garlic adds delicious flavors and forms the base of the soup.

Soy Sauce or Tamari Sauce – I prefer using Lee Kum Kee Dark Soy Sauce. They are pretty dark and thick in texture. So adding a little goes a long way. For Gluten Free option, use Tamari Sauce.

Salt & Pepper

Corn Flour – Add a little corn flour to water and create a slurry. Adding this to the soup will get a consistency. However it is optional. If you prefer to leave corn flour out!

Spring Onions – can be used for garnishing

HOW TO MAKE THIS VEGETABLE SOUP CLEAR

To make this Soup, the first and foremost step is to wash and dice the vegetables. To speed up the process, I like to add the vegetables to the food processor to dice or shred the vegetables using the s blade.

Like wise, I use the food processor to dice the onions too. The whole chopping process is only 2-3 minutes – thanks to the food processor.

Heat oil in a large pot, add ginger garlic and onion. Saute them for about 2 minutes until translucent.

Add the all the remaining vegetables and saute until they wilt a little and the raw smell has gone.

Add about 3 Cup of boiling water from the kettle, sauces, salt & pepper. Cover and cook for about 4-5 minutes.

Mix 1 Tbsp corn flour in 1/2 cup of water and whisk to combine without any lumps. Add it back to the soup and allow to simmer for another 2 -3 minutes until the soup thickens.

Season with more salt, pepper, soy sauce as needed. Serve hot.

SERVING SUGGESTIONS FOR VEGETABLE CLEAR SOUP

I love to serve this soup with Irish Soda bread or dinner rolls. At times, we also love some Garlic Knots and Salad as an accompaniment.

For a creamy vegetable soup, I would prefer croutons as a topping .

FREQUENTLY ASKED QUESTIONS

What is Clear Soup?

Clear Soups are delicate soups with no thickening agents in them. However the clear soups I have tasted in restaurants do have a bit of thickener to lend the consistency.

What is Japanese Clear Soup?

Japanese Clear Soup is slightly different to the Vegetable Clear Soup. Vegetables and the Broth are simmered together for deep flavors. The vegetables are removed from the soup to make it clear. It is garnished with scallions ( green onions) and sometimes with sliced mushrooms.

What Vegetables can I use for Clear Soup?

To make veg clear soup you can use vegetables like cabbage, carrot, leeks, sweet corn, cauliflower, mushrooms, broccoli, bok choy, brussels sprouts,  peppers and beans. You can use any vegetables that are easily available to use.

I also call this clear soup a fridge clear out soup – basically I try and use all the leftover vegetables.

What can I add to Clear Soup to make it more filling?

This veg clear soup is light and delicious. To serve this Soup as meal, adding additional protein or starch will make it wholesome.

Add sauteed tofu or mushroom to the soup is an option.

You can also add pasta or noodles or rice to the soup. For more of a balanced meal, you can add cooked lentils, beans and cheese too.

Ingredients

  • 1 Tbsp Olive Oil
  • 2 Cup Chopped vegetables Cabbage, Carrots, peppers, corn, beans
  • 1 Onion finely chopped
  • ½ tsp Ginger grated
  • 1/2 tsp Garlic minced
  • 1 Tbsp. Corn flour { optional }
  • ½ -1 tsp Soya Sauce or Tamari
  • 1 tsp Sweet Chilli Sauce
  • ½ tsp Pepper Powder
  • Salt to taste
  • 3 Cup Water
  • 2 Tbsp Spring Onions

Instructions

  • Wash the vegetables and dice them.
  • Heat oil in a non-stick pan. Add ginger, garlic, onions and fry until slightly translucent.
  • Add the chopped vegetables and sauté in medium flame for 2-3 minutes, until all the raw smell disappears and they are partially cooked.
  • Pour 2.5 Cup of Boiling Water.
  • Now season with salt, pepper, soya sauce and sweet chilli sauce. Stir to combine. Cover and allow it simmer for a couple of minutes. Approximately 6-8 Minutes.
  • Mix corn flour with 1/2 cup water to make a slurry. Add the corn flour paste to the simmered soup, allow 3-4 more minutes of simmering. You will eventually see the soup thicken slightly. { This is an optional step}
  • Garnish with scallions (spring onions) and serve hot.

Notes

I do love to add 1/2 tsp rice vinegar & green chili sauce to my soup sometimes.
Taste and add more soya sauce to suit your flavors.
