Air fryer Breakfast Potatoes with Onions and Peppers

Air fryer breakfast potatoes with onions and peppers are ready in under 20 minutes - no oven required.  They’re the perfect vegan side dish for busy mornings or when you want something special without the fuss.

These also make fantastic Christmas morning breakfast potatoes – easy, hands-off, and always a hit!

I love air frying potatoes and the ease it brings to mealtimes – from air fryer crispy potato slices , Indian-style air fryer potatoes, air fryer Parmentier potatoes, or even air fryer smashed potatoes. It’s such a handy way to get crispy results without the oven.

But when it comes to breakfast, I’ve mostly just made frozen hash browns in the air fryer. So making these air fryer breakfast potatoes from scratch feels like a lovely little upgrade – and I think they might just become your new go-to for busy mornings too!

Just like my easy air fryer roast potatoes, this air fryer home fries recipe with peppers and onions is super simple. Toss everything straight into the air fryer basket, and let the air fryer do its thing in 15 - 18 minutes – crispy, golden side dish.

  • Potatoes: Choose starchy potatoes like baking potatoes, Rooster Red Potatoes, or Maris Piper (UK). In the US, Russet Potatoes or Yukon Gold potatoes work well.
  • Onions: I use red onion for its sharp taste. You can also use white onions if you prefer.
  • Peppers: I use a mix of red and yellow peppers. I don’t usually add green peppers here, but if you want a recipe with potatoes and green bell pepper, check out my aloo shimla mirch recipe.
  • Oil: Any oil works – olive oil, sunflower oil, vegetable oil, or avocado oil.
  • Seasoning: I like garlic and onion powder for flavour. Feel free to swap in smoked paprika, red pepper flakes, or seasoning blends like Cajun, taco, fajita, or curry powder.
  • Salt & Pepper: Adjust to taste.

Variations

  • Sweet Potatoes: Use the same recipe to make breakfast sweet potatoes with onions and peppers.
  • Seasoning: Try Indian spice mixes like 2-minute Garam Masala, Cajun, Italian, or BBQ seasoning for different flavours.
  • Vegetable Combinations: Add other veggies like cauliflower and tomato, like in my aloo gobi tray bake.
  • Additional Ingredients: Add sliced garlic, cherry tomatoes, or cooked proteins such as sliced sausage (as in my sausage and potato traybake recipe), paneer, or tofu to boost flavour and make it more filling.
  • Garnish: Sprinkle with fresh parsley or chives before serving.

How To Make Breakfast Potatoes With Onions And Peppers In Air Fryer: Step-By-Step

Step 1. In a bowl, add cubed potatoes, onions, peppers along with oil, garlic powder, onion powder, salt, and black pepper.

Step 2. Toss to combine or mix with breakfast potato mixture with a spatula.

Step 3. Spread the potato mixture in a single layer in the air fryer basket.

Step 4. Air fry at 360°F (180°C) for 15–18 minutes, shaking the basket a couple of times for even cooking. The potatoes will be crispy on the outside and tender inside, with caramelised onions. Remove from the air fryer and serve as a side dish or enjoy on its own.

Serving

I love how versatile breakfast potatoes are—they work well for breakfast, lunch, or dinner. Some of my favourite ways to enjoy them are

  • With air fried hard boiled eggs, vegan air fryer sausages, air fryer sautéed mushrooms, and tomatoes.
  • Serve alongside  air fryer vegetables for a delicious and healthy meal.
  • Use as a topping in sweet potato buddha bowl.
  • Add to wraps along with lettuce, air fryer falafels and cheese for added flavour.
  • For something comforting, try with  tadka dal, air fryer paneer tikka, whole wheat chapatis, kachumber salad and onion raita.

Variations

Seasoning: Alternate your seasonings with Indian seasoning mix, cajun seasoning, Italian seasoning, or BBQ seasoning to add a unique twist to the sautéed potatoes and onions

Vegetable Combinations: Combine with other vegetables like cauliflower and tomato as in aloo gobi tray bake for a tasty variation. 

Additional Ingredients: Consider adding other ingredients like sliced garlic, cherry tomatoes, or even cooked protein such as sliced sausage, paneer or tofu. These additions will up your flavours and provide a more filling meal.

Garnish: With parsley or chives.

Storing leftovers

Got leftovers? Transfer to airtight container and keep them in the fridge for up to 2 days. When you're ready to eat, reheat in the air fryer at 180°C (360°F) for 4–5 minutes until crispy again. Serve straight away and enjoy!

Tips

  • Cube the potatoes, peppers, and onions evenly (about 1-inch cubes) for even roasting in the air fryer. This is my personal preference—you can also use wedges or larger chunks.
  • If you prefer less caramelised onions, add them to the air fryer later in the cooking process.
  • Soaking the cubed potatoes in cold water for 15 minutes helps remove extra starch and gives crispier potatoes like my crispy potato slices recipe. (optional step)
  • Save time by partially cooking the vegetables ahead of time and storing them in the fridge. Then just air fry before serving to make easy, make-ahead breakfast potatoes.

  • Air fryer Bubble and Squeak
  • Frittata or Quiche: Combine potatoes, onions, eggs, and cheese for a delicious frittata or quiche.
  • Potato Salad: Mix air fryer roasted potatoes and onions with mayo, dijon mustard, and  dill for a tasty side dish.

Recipe FAQ's

Can I omit the onions and peppers?

Yes, absolutely. You can skip them if you prefer plain breakfast potatoes like Air fryer Indian Potatoes.

Can I adjust the seasoning to my taste?

Of course! This recipe is super flexible. Feel free to use your favourite spices or seasoning blends—Cajun, taco, Italian, or even a pinch of Indian spice mixes like 2-minute Garam Masala or curry powder all work well.

Are these potatoes suitable for meal prep?

Yes! They store really well. You can make them ahead and refrigerate for up to 2 days. Just reheat in the air fryer for a few minutes before serving to get them crispy again.

Can I freeze them?

If you’ve included onions and peppers, I wouldn’t recommend freezing as they don’t freeze well. But plain breakfast potatoes freeze just fine—cool them completely, then freeze in a sealed container or bag. Reheat in the air fryer until hot and crispy.

Can I make these breakfast potatoes in the oven instead?

Definitely! Just spread the seasoned potatoes on a baking tray and roast in a preheated oven at 400°F (200°C) until golden and crispy, about 25–30 minutes.

Do I need to peel the potatoes?

Not at all! I usually leave the skin on—it adds nice texture and saves time. But if you prefer them peeled, that works too.

These easy air fryer breakfast potatoes with onions and peppers are ready in under 20 minutes and perfect for busy mornings, weekend brunch or holidays like Thanksgiving and Christmas too.

Ingredients

  • 3 cups potatoes cubed (520g)
  • 2 cups mixed peppers cubed (240g)
  • 1 cup red onion cubed (75g)
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 tablespoon olive oil

Instructions

  • Mix potatoes with oil, salt, pepper, onion powder, and garlic granules.
    3 cups potatoes, 2 cups mixed peppers, 1 cup red onion, 1 teaspoon salt, ½ teaspoon ground black pepper, ½ teaspoon onion powder, ½ teaspoon garlic powder, 2 tablespoon olive oil
  • Preheat air fryer to 190°C (375°F).
  • Put seasoned potatoes, peppers, and onions in the air fryer basket.
  • Air fry for 15-18 minutes, tossing halfway, until potatoes are crispy and peppers/onions are caramelized.
  • Serve hot. Enjoy your delicious breakfast potatoes!
