For making Indian inspired air fryer cabbage steaks, you'll only need 3 main ingredients along with salt and pepper.

- Cabbage: I recommend using white or green cabbage for this recipe, as it holds together well as steaks or wedges. Napa cabbage is too delicate, and Savoy cabbage or doesn't crisp up when roasted.
- Extra virgin olive oil: You can use avocado oil or curry leaf oil for added flavor.
- Garlic: I've used Garlic powder. Fresh minced garlic also works.
- Salt and pepper, to taste.
- Seasoning: Mild curry powder or pre-made seasoning mixes like Cajun or taco seasoning work well.
- Herbs: Fresh coriander or parsley make great garnishes for the roasted cabbage steaks.
🔪How to Make Air fryer Cabbage Steaks?: Step by Step

Step 1. Cut the cabbage head into 1-inch to 1 ½ inch thick slices to resemble"steaks." Ensure the core remains intact to hold the slices together.
Tip. Removing any wilted or discolored outer leaves from the cabbage head.

Step 2. In a small bowl, mix together olive oil, curry powder, garlic powder, salt and pepper. Lightly brush the cabbage steaks with a curry powder seasoning mixture on the top side.

Step 3. Place the seasoned cabbage steaks facing down in the air fryer basket. Brush the other side with the seasoning mixture.

Step 4. Air fry at 180°C (360°F) for 12-15 minutes or until the cabbage is tender and the edges begin to brown.
Once cooked, add a squeeze of lemon juice, sprinkle fresh coriander, and serve.
How to Make Cabbage Steak in the Oven?
- Preheat your oven to 400°F (200°C). This ensures that the oven is adequately hot when you're ready to bake the cabbage steaks.
- Line a baking sheet with parchment paper to prevent sticking. Arrange the seasoned cabbage steaks on the baking sheet with the seasoned side facing down.Brush the remaining seasoning mixture onto the top side of the cabbage steaks. Add more curry powder or desired seasoning to taste.Bake for about 25-30 minutes, or until the cabbage is tender and the edges begin to brown.
- Serve: Once done, remove the cabbage steaks from the oven and let them cool for a few minutes. Serve hot as a delicious and healthy side dish.
