Ingredients
For making Indian inspired air fryer cabbage steaks, you’ll only need 3 main ingredients along with salt and pepper.
- Cabbage: I recommend using white or green cabbage for this recipe, as it holds together well as steaks or wedges. Napa cabbage is too delicate, and Savoy cabbage doesn’t crisp up when roasted.
- Extra virgin olive oil: Alternatively, you can use avocado oil or garlic-infused chili oil for added flavor.
- Garlic: Garlic powder or minced garlic are delicious addition to the cabbage steaks.
- Salt and pepper, to taste.
- Seasoning: Mild curry powder or pre-made seasoning mixes like Cajun or taco seasoning work well.
- Herbs: Fresh coriander or parsley make great garnishes for the roasted cabbage steaks.

Key tips to make Air fryer cabbage steaks
- Cut the head of cabbage into slices to resemble steaks, at least 1 to 1 1/2 inches thick. Thinner slices can become fragile and fall apart easily during cooking.
- Avoid moving the cabbage steaks around too much while they’re in the air fryer. You don’t need to flip the steak.
- Ensure the cabbage steaks are not overlapping in the air fryer basket to allow for even cooking.
Variations
- Swap out the curry powder seasoning for a simple blend of garlic, onion powder, smoked paprika powder, salt, and pepper. Then, chop the roasted cabbage and toss it with your preferred balsamic or lemon vinaigrette to make a roasted cabbage salad.
- If you’re out of green or white cabbage, try using red cabbage to make air fryer red cabbage steaks.
- Experiment with different seasoning mixes or spice mixes like garam masala, taco seasoning, Cajun seasoning, italian seasoning or Old Bay seasoning for added flavor variety.
