Here’s my easy recipe for Air Fryer Cabbage Steaks! Just 6 ingredients and 20 minutes are all you need for crispy, flavorful cabbage steaks seasoned with curry powder. A healthy and tasty side dish that works for any meal, and perfect for St. Patrick’s Day.

Do you have a cabbage in your fridge and wonder what to make for dinner? Other than Kerala cabbage thoran, buttered savoy cabbage or no mayo coleslaw? Cabbage steaks are a wonderful way to create an easy vegetable side dish in minutes, with hardly any effort.

The best part about air fryer cabbage is that the recipe uses less oil, so you'll get the crunch without extra calories. Plus, they are ready in just 20 minutes or less, and you also can serve them for St. Paddy's Day.

  • Slice thick- Cut the cabbage into 1 to 1 ½ inch thick slices so they hold together while cooking. Thinner slices can fall apart easily.
  • No flipping needed- Once in the air fryer, let them cook without moving—this helps keep the steaks intact.
  • Don’t overcrowd- Arrange the cabbage steaks in a single layer with space between each one for even cooking.

For making Indian inspired air fryer cabbage steaks, you'll only need 3 main ingredients along with salt and pepper.

  • Cabbage: I recommend using white or green cabbage for this recipe, as it holds together well as steaks or wedges. Napa cabbage is too delicate, and Savoy cabbage or doesn't crisp up when roasted.
  • Extra virgin olive oil: You can use avocado oil or curry leaf oil for added flavor.
  • Garlic: I've used Garlic powder. Fresh minced garlic also works.
  • Salt and pepper, to taste.
  • Seasoning: Mild curry powder or pre-made seasoning mixes like Cajun or taco seasoning work well.
  • Herbs: Fresh coriander or parsley make great garnishes for the roasted cabbage steaks.

🔪How to Make Air fryer Cabbage Steaks?: Step by Step

Step 1. Cut the cabbage head into 1-inch to 1 ½ inch thick slices to resemble"steaks." Ensure the core remains intact to hold the slices together.
Tip. Removing any wilted or discolored outer leaves from the cabbage head.

Step 2. In a small bowl, mix together olive oil, curry powder, garlic powder, salt and pepper. Lightly brush the cabbage steaks with a curry powder seasoning mixture on the top side.

Step 3. Place the seasoned cabbage steaks facing down in the air fryer basket. Brush the other side with the seasoning mixture.

Step 4. Air fry at 180°C (360°F) for 12-15 minutes or until the cabbage is tender and the edges begin to brown.

 Once cooked, add a squeeze of lemon juice, sprinkle fresh coriander, and serve.

How to Make Cabbage Steak in the Oven?

  1.  Preheat your oven to 400°F (200°C). This ensures that the oven is adequately hot when you're ready to bake the cabbage steaks.
  2.  Line a baking sheet with parchment paper to prevent sticking. Arrange the seasoned cabbage steaks on the baking sheet with the seasoned side facing down.Brush the remaining seasoning mixture onto the top side of the cabbage steaks. Add more curry powder or desired seasoning to taste.Bake for about 25-30 minutes, or until the cabbage is tender and the edges begin to brown.
  3. Serve: Once done, remove the cabbage steaks from the oven and let them cool for a few minutes. Serve hot as a delicious and healthy side dish.

Variations

  • Swap the seasoning- Replace curry powder with a simple mix of garlic, onion powder, smoked paprika, salt, and pepper. Chop the roasted cabbage and toss with balsamic or lemon vinaigrette for a quick roasted cabbage salad.
  • Try red cabbage(I also use it to make red cabbage coleslaw)- If you don’t have green or white cabbage, use red cabbage to make vibrant air fryer red cabbage steaks.
  • Mix up the spices- Experiment with different seasoning blends like instant garam masala, taco seasoning, Cajun spice, Italian seasoning, or Old Bay for extra flavor.

🍽 Serving Suggestions

Cabbage steaks make a fantastic vegetable side dish or as a main dish loaded with sauce and garnishes.

  • Serve with a squeeze of lemon, garnish, and enjoy this delicious side with green chutney or coriander sauce as your main if you like.
  • Enjoy cabbage steaks as a side dish in a Buddha bowl along side brown basmati rice or quinoa, roasted air fried chickpeas, and green chutney.
  • They also pair well with air fryer cream cheese stuffed mini peppers or curried butternut squash soup.

🧂Storing Leftovers

  • In the fridge: Store the leftover roasted cabbage steaks in airtight container in the fridge for up to 5 days.
  • To reheat in the air fryer, place the cabbage steaks in the air fryer basket and air fry at 180C for 3-4 minutes until heated through and has slightly crispy edges.

  • 1 cabbage medium head
  • 1 tablespoon olive oil
  • 1 tablespoon mild curry powder

Instructions

  • Prep the cabbage: Start by removing any wilted or discolored outer leaves from the 1 cabbage head.

  • Prep and Brush with seasoning: In a small bowl, add 1 tablespoon mild curry powder,½ teaspoon garlic powder,½ teaspoon salt,½ teaspoon black pepper,1 tablespoon olive oil. Combine together.
    Lightly brush the cabbage steaks with a curry powder seasoning mixture on one side.
  • Air fry: Arrange the cabbage steaks in the air fryer basket, with the seasoned side facing down. Brush the remaining seasoning mixture onto the top side of the cabbage steaks. and cook at 180°C (360°F) for 12 minutes or until the cabbage is tender and the edges begin to brown
