The lovely folks at Portmeirion recently challenged me to create a summer al fresco sharing recipe to show off their amazing Botanic Garden Harmony range of British made pottery.
The result of this challenge, are these this super delicious, easy Cajun Roasted Cauliflower Steaks with Cilantro Avocado Chutney & Yogurt Dip. I knew these steaks would look just great on the Botanic Garden Harmony tableware collection.

We have always been using great weather as the perfect excuse for spending time with friends and family outside, either in the form of al fresco dinning or barbecue or garden parties. Okies, so what ingredients are needed?
INGREDIENTS TO MAKE CAULIFLOWER STEAKS with CAJUN SEASONING
We need just a handful of ingredients, in fact, just six altogether!
Cauliflower – Choose a cauliflower that is small to medium sized to serve individual portions.
Olive Oil or Coconut Oil – We love either of them in our home. You may alternatively choose to use an oil of your choice.
Lemon Juice – Adds a lot of freshness to the grilled cauliflower steaks
Cajun Seasoning – is one of my favourite spice mix combination. You can use a store bought cajun spice mix or make it at home.
So, how to make the best cajun seasoning? All the ingredients for making cajun seasoning are just in your spice drawers. In general, it’s a spicy blend made with a combination of paprika, cayenne, garlic powder, pepper and oregano.
To make cajun seasoning, simply mix 1 tbsp paprika, 2 tsp garlic powder, 2 tsp pepper powder, 1 tsp onion powder, 1 tsp oregano powder & 1 tsp salt in a bowl and mix until well combined. You may store this cajun spice mix in an airtight container up to a year.
Salt & Pepper to taste
HOW TO CUT CAULIFLOWER STEAKS
To prepare cauliflower steaks, remember to cut the cauliflower in thick chunky slices, roughly 1 inch along with the stalk. By doing so, you can keep the steaks in one piece. Don’t you worry if you have any broken cauliflower florets. Set them aside for cauliflower manchurian or even cauliflower fried rice.
HOW TO MAKE OVEN ROASTED CAULIFLOWER STEAKS
Wash the cauliflower and remove all the leaves. Cut the cauliflower into chunky slices.
Marinate the chunky cauliflower sections with oil, lemon juice and cajun seasoning. For a little extra punch, add a tsp of ginger and garlic powder too.
At this stage, you can decide if you want to air-fry it, roast it or grill it.
I have roasted the prepared cauliflower steaks in a preheated oven for roughly 35 minutes, turning once in between.
Place the vegan cauliflower steaks on the serving platter along with scattered chopped parsley, lime wedges and toasted pine-nuts. Serve the steaks hot with green coriander chutney.

Ingredients
Ingredients for Roasted Cauliflower Steaks
- 2 Heads of medium sized cauliflower
- 4-5 tbsp cajun seasoning
- 1/4 cup olive oil
- 2 tbsp lemon juice or juice of 1 lemon
- salt & pepper to taste
Garnish
- Chopped Parsley
- Lime Wedges
- Toasted Pinenuts
Ingredients for Green Coriander chutney
- 50 g coriander leaves
- 1 medium avocado
- Juice of 1/2 lemon
- salt to taste
- 1/4 cup of water
- 1 Green Chilli optional
Instructions
CAJUN ROASTED CAULIFLOWER STEAKS RECIPE
- Wash cauliflower and pat dry.
- Preheat the oven to 200C.
- To prepare cauliflower steak, remember to cut the cauliflower in thick chunky slices, roughly 1 inch along with the stalk. By doing so, you can keep the steak in one piece.
- Layer the cauliflower steak slices on a lined baking sheet. Brush olive oil on either side of the slices. Generously drizzle lemon juice all over.
- Sprinkle generous portion of the cajun seasoning powder all over the steak.
- Place the cajun spiced cauliflower steak in the oven for 25 minutes. Flip them over and bake for another 10 minutes.
- Season with salt and pepper and serve hot with Cilantro Avocado Chutney.
Green CORIANDER CHUTNEY RECIPE | CILANTRO AVOCADO CHUTNEY
- Add all the ingredients in the blender and whizz until smooth. Add more water, if needed.
