 CILANTRO LIME RICE RECIPE

I am a huge fan of Chipotle. This rice recipe is a copycat version of their popular Chipotle cilantro lime rice. If you love Chipotle rice, you will love this quick and easy Instant Pot recipe that you can make at home. This classic rice recipe can be made in your Instant Pot in a jiffy. Made with simple inexpensive ingredients from your pantry, this Mexican rice recipe comes together in less than 30 minutes.

Ingredients You’ll need

To get started you will need the following ingredients

cilantro lime rice ingredients

WHITE RICE

VEGETABLE STOCK or BROTH or WATER

CILANTRO or CORIANDER

LIME ZEST

LIME JUICE

OLIVE OIL

BUTTER

SALT

Once you have gathered the ingredients, Pick your INSTANT POT and make this EASY INSTANT POT CILANTRO LIME RICE with me.

How to make Copycat Chipotle Cilantro Lime Rice in Instant Pot STEP BY STEP ?

RINSE & DRAIN – Place the Basmati Rice in a colander and wash it under running tap water, until it is clear.

SAUTE – Press sauté button on Instant Pot. Add Oil followed by rinsed rice. Stir for 1 minute. This step helps in avoiding the rice sticking to the bottom of the pot. { Optional }

ADD STOCK – Add the stock and stir. Turn off the Sauté Mode.

PRESSURE COOK – Secure the lid. Turn the valve to sealing position. Select PRESSURE COOK HIGH for 5 minutes. Allow natural pressure release for 3 minutes and then Quick Release any remaining pressure.

FLUFF RICE – Remove the lid after the valve drops. Fluff the rice with fork.

ADD THE REMAINING INGREDIENTS – Add Butter, Lime Zest, Cilantro leaves, Lime Juice and Salt. Stir to combine.

SERVE – Serve this delicious side dish with your favorite homemade burrito bowl.

Storing and Reheating Lime Cilantro Rice

Store – Allow the rice to cool down completely. Store the rice in an air-tight container in the fridge for up to 3 days.

Freeze – Store the rice in freezer safe container for up to 3 months in the freezer. Thaw the rice in the fridge over night before Reheating.

TIPS & SUGGESTIONS for INSTANT POT CILANTRO LIME RICE

I love using Broth / Stock in my recipe to give it all the extra flavor.

The addition of lime juice adds extra zing to the rice. You can always reduce the amount to suit your flavors.

To make VEGAN CILANTRO LIME RICE, leave out butter from this recipe.

I love using long grain Basmati Rice for this recipe. Long grain rice has less starch and works best in this recipe. Once the rice is cooked, they remain drier and each grain separated. Sticky rice like Jasmine Rice are not a good choice for the cilantro lime rice recipe.

Do you use Cilantro stems in your rice? I  do. I love chopping the cilantro leaves and stems finely and using them in my recipes. There are amazing flavors in the Cilantro Stem.

Serving Suggestions

  • 1 Tbsp Olive Oil

    Yummy! Made it last night for the family (I subbed in unsalted chicken stock since I had that on hand). My son does not eat rice-he ate 2 servings of this and declared it better than Chipotle’s! This is my new go to recipe for rice. Thank you!

    This is a very tasty recipe! Even my husband and kids loved it! I had my doubts as to whether the rice would be done, as other recipes require the rice to be soaked, but the rice came out perfect!

    So so good! I usually don’t like cilantro but this combination and the ratios of everything is perfect! I double everything to feed my family of 5 and the kids all love it!

    You guys! This recipe is SO yummy! And it’s NEARLY foolproof!
    I almost skipped the saute step. I waited too long to eat & was becoming hangry. (I am eating it as I type this) Thankfully I didn’t. Because again, in my rush, I did not get the seal in properly & well, you know… burn mesg., freak out, blah blah… ..fast forward to saving the rice & adding a few extras. garlic, dash of both cumin & paprika. End result is deliciousness! My cilantro isn’t chopped as well as it could be, again, I was in a hurry. But I love cilantro so its cool by me.

    I’m still new to the instant pot – if I want to make a larger portion and double the ingredients, do I also need to double the cooking time? Or just increase slightly?
